1 large container of strawberries (the larger each berry the better), washed
8 oz cream cheese
2 tbsp confectioners sugar
1/2 tsp vanilla extract
almonds (sliced or slivered) - optional
1. Cut the top and bottom off of each strawberry
2. Use the small end of a melon baller to scoop the middle of the top out
3. Blend cream cheese, confectioners sugar, and vanilla in food processor or in a bowl with an electric blender
4. fold a large plastic ziplock bag down over a bowl and use a spatula to transfer the cream cheese mixture
5. Close the bag and squeeze the mixture down to the corner of a bag. Clip a small corner of the bag off.
6. Fill the top of each strawberry with the cream cheese mixture in a swirl pattern by squeezing the bag lightly and moving it in a circular motion
7. If you like almonds you can toast a few slivered or sliced almonds and place them on top of the strawberries
These look soooooo good. I have a bunch of left over strawberries and I've been trying to figure out what to do with them. Maybe I will try this.
