DIY cupcakes

Its not rocket science people.  Its cupcakes.  Have fun with them!

Any boxed cake mix will do.  Follow instructions on the back.  For a more home made taste add chocolate chips, nuts or other small candy to batter.

Tip: fill cupcake wrappers up only 2/3 of the way.  Cupcakes expand when they bake and you don't want them completely overflowing.

Cream cheese icing: In a food processor or in a bowl with an electric mixer cream 4 oz of unsalted butter and 8 oz of cream cheese.  Add 2 cups of confectioners sugar, bit by bit until all the sugar is mixed in.  Add 1 tsp of vanilla extract once all the other ingredients are thoroughly mixed.

You can ice with a spoon or spatula.  I used icing tips.

Cut off the corner of a plastic baggie, insert icing tip into cut corner.  Fill bag with icing.  Twist bag until all icing has been forced to bottom.  Ice as you please.
