Lemon Rosemary Orzo

I found this recipe when I was browsing Eat Yourself Skinny.  Kelly is a food blogger who features healthy recipes and even includes weight watchers points values.   Whether you are watching your weight or not this recipe is a savory and delicious side.  Throw in some chopped chicken and it could be a meal all on its own.  The smell of lemon and rosemary that filled my house while making this dish made me drool.

Ingredients:
3/4 cup orzo
1/2 tbsp butter
1/2 tsp chopped rosemary
2 tsp fresh lemon juice
1/2 cup chicken broth
3/4 cup water
1/4 teaspoon salt

1. Brown the orzo over medium heat in a pot or deep sauce pan
2. Add all remaining ingredients
3. Bring to a boil, cover and reduce heat stirring occasionally for 15 minutes until all liquid is absorbed and orzo is tender (I like mine al dente, with a bit of a bite)


Note: A garnish isn't just to make your food look pretty.  Garnishes let you know what flavors are in the food you are eating.
