Spinach and Mozzarella spirals and Savory Chicken Puff Pastry Bites

Spinach and Mozzarella Spirals:

Tools:
Kitchen Brush
Plastic Wrap

Ingredients:
1 sheet thawed puff pastry
3/4 package frozen chopped spinach
1 cup mozzarella cheese
4 tablespoons butter, melted
Basil for garnish

Directions:
1. Preheat oven to 400 degrees
2. Microwave spinach according to directions on package.  After spinach has cooled put it into a dish rag and wring the extra water out over the sink.
3.  Spread the spinach across an unfolded sheet of puff pastry.
4. Sprinkle the mozzarella across the top of the spinach.
5. Roll the entire sheet of puff pastry up from one end to the other so it creates a spiral at the end.
6. Wrap the roll in saran wrap and put in the freezer for 10 minutes
7. Remove the pastry roll and slice into 1/2 inch spirals
8. Spread the spirals across a baking sheet and use a kitchen brush to baste the top with the melted butter
9.  Cook for 15 minutes or until top is browned and crispy
10.  Garnish with torn or chopped basil


Savory Chicken Puff Pastry Bites:

Tools:
A large round cookie or biscuit cutter
A kitchen brush

Ingredients:
Left over shredded chicken
1 sheet thawed puff pastry
1/4 package frozen chopped spinach
1/4 cup mozzarella cheese
Melted butter

Directions:
1. Preheat over to 400 degrees
2. Microwave spinach according to directions on package.  After spinach has cooled put it into a dish rag and wring the extra water out over the sink.
3. Lay out puff pastry sheet and use biscuit cutter to cut as many circles as you can out of the puff pastry sheet.  Discard excess dough.
4. Put a very small amount of spinach in the center of each round
5. Put two or three small pieces of chicken on top of the spinach and sprinkle with mozzarella
*Tip* use your own discretion to decide how much of each ingredient should go on each round but be careful not to overfill so they do not pop open while baking
6. Use a knife or your clean finger to spread a bit of butter around the rim of each round
7. Fold one side of the round over to the other and press the edges down gently so they adhere to one another
8. Use a fork to press the edges together a little more firmly
9. Spread butter over the outside of the pastries with your kitchen brush
10. Bake for 15 minutes or until outside is lightly browned
